Egg Sauce Recipe

Egg Sauce is just one of many egg recipes existing in Nigeria. Egg Sauce is made with Eggs,  Tomatoes, Pepper, Onions, Vegetable oil and Maggi. You can actually add a handful of pumpkin leaves (ugu) but that’s optional. This sauce in Nigeria is usually served with yam. I seldom see people serve with rice, it’s happens but not often.
Complete ingredients for yam Sauce
*Sliced Pepper
*Sliced Tomatoes
*Sliced Onions
*Vegetable oil
*1 cube of Maggi
*Salt to taste
*2 spoons of sliced green peppers(optional).
Slice your Tomatoes, Onion, and Pepper, you can easily do this with a sharp knife like those from Wetheknives and a chopping board.
Set your frying pan on the Heat and add 200ml of Oil (Vegetable or Olive oil) allow one minute before adding the sliced Tomatoes/onions/Pepper. Allow this to fry for 10_15 minutes. Remember to always stir, you don’t want to end up with a burnt Tomatoes.
Once it’s adequately fried, add salt to taste, add Maggi seasoning cube.
Beat the egg in a separate plate. Add a pinch of salt to it and then pour on the frying tomatoes/onion/pepper combination. Allow a minute and then stir. Try to break crumbs into smaller size you can sprinkle a handful of pumpkin (ugu)leaves if you like.
That’s just how to make Egg Sauce yam. I did say that you can also serve this sauce with rice, beans, or even Spaghetti.
