Pancake Tuesday is upon us once again.  This means lent is just around the corner.  But before this lets have fun stuffing our faces with Pancakes in Dublin.

1. Lemon Creperie has two restaurants one on Dawson Street (Lemon HQ) and one on South William Street (the trendy one so it says on its website.  Both cafes have rich coffee and have a full menu with freshly prepared crepes, sandwiches, omelettes, and pastries.  With the Dawson Street branch doing decadent waffles as well.

They use organic fair-trade irish produce. Every dish is made from scratch cooked in front of you.

2. Metro Cafe South William Street you can eat these pancakes all day long as they are not just on the breakfast menu. They are fluffy American style pancakes served with pure maple syrup.

3.  The Bell and Pot Mercer Street there buttermilk pancakes are served with summer berry compote, maple syrup or strawberries, banana, and maple syrup.  On the weekends these are served form 11:30am to 5pm.

4. Lennox Cafe Bistro Lennox Street- they do an amazing stack of pancakes with lemon, butter, and sugar.

 

But if all else fails here is the American pancake recipe guaranteed to make fluffy pancakes every time.:

Prepare and preheat your griddle or frying pan:

Whisk together in a large bowl:

1  cups all- purpose flour

2 tablespoons sugar

1 1/2 teaspoons baking powder

1/4 teaspoons salt

Wisk together in another bowl:

1  cups milk

2 tablespoons unsalted butter, melted

1 large eggs

1/2 teaspoon vanilla (optional)

Pour the wet ingredients over the dry ingredients and gently whisk them together, mixing just until combined.  Spoon 1/2 cup onto the griddle for each pancake.  Cook until the top of each pancake is speckled with bubbles and some bubbles have popped open, then turn and cook until the underside is lightly browned.
