Well well well. Didn’t Pancake Tuesday really… crépe up on us very fast.
I believe myself to be a connoisseur of the pancake, or crépe as our French neighbours call it. Many a pancake have I sampled; fat, fluffy, thin, stacked, I don’t discriminate. I love pancakes of every shape and size.
Now my little grasshoppers, come close and listen… I want to pass on my wisdom about the art of pancake making gathered from copious amounts of time spent on the internet.
First up is one for the ever growing population of health conscious lovers out there. The vegan diet pretty much exploded onto the market in the past year, making it one of the trendiest diets around. So if you want to get in on this trend try this eggless recipe! Using bananas instead to combine the mixture. Vegans love their bananas. Nom.

Instead of the previous vegan recipe using buckwheat flour, this recipe uses quinoa, packed full of protein, perfect for that after workout treat! Muscles… aww yisss… gains brah. Gains.

This little beauty of a pancake only has 2 (!!) ingredients: 1 banana and 2 eggs. Obviously I mean 2 types and not number of items… why are you so picky?
Anyways, pop the banana and eggs into a blender, then just push the little button… bit of blendy- blendy… et voila! Pancake batter! Cook over a medium heat until golden brown. Use coconut oil because obvs #healthy.
Want to spice things up a bit? Add a pinch of cinnamon to the mix!
These rainbow pancakes are sure to get you a few likes on Instagram or if you’re into fishing…. for likes, throw a picture up on Facebook! If you want to be all hipster about it, photograph your empty plate. I know right?

Ah the supermarket, always there for us in our hour of laziness. Can’t be bothered actually making pancake mix? Just buy it! What? You’re lazier than that? Luckily for you people actually make pancakes and sell them in shops. No one should be without pancakes on Pancake Tuesday!
Now I must be off, I’ve got a record of 30 pancakes eaten to beat. Last year though, too many gave me a panc-ache… I’ll get my coat.
